Breakfast Egg Wrap
Here’s what you need:
1 Serving Breakfast Sausage, crumbled (my recipe here)
1 Red Pepper
3 Eggs, whisked
Here’s what to do:
Slice red pepper into strips and saute until cooked.
Using a nonstick skillet and avocado oil on low heat, add whisked eggs to skillet.
Let eggs cook without stirring or flipping. Be patient, and keep an eye on your skillet’s temperature to ensure eggs don’t dry out. You can also cover skillet with lid to cook faster.
Once top of egg “wrap” is no longer shiny, carefully slide onto a plate. Add sauteed red pepper slices and crumbled breakfast sausage to center, and fold ends to roll into a wrap.
Recommended: add slices of avocado or aioli. The key to mastering an egg wrap is a quality nonstick pan. I recommend this brand.
