Easy Paleo Chicken Dinner for Two
Here’s what you need:
-2 Medium-Sized Russet Potatoes, Chopped
-2 Large Handfuls Fresh Green Beans
-2 Boneless, Skinless Chicken Breasts
~1/4 C. Ghee (or other cooking oil)
-2 Tbsp. Italian Seasoning
Here’s what to do:
Preheat oven to 350°.
Spread potatoes, chicken, and green beans in a small casserole dish.
Place dollops of ghee over the top of everything, then sprinkle generously with Italian seasoning.
Bake covered for one hour.
Honestly I don’t stir in the ghee or seasoning or anything. I don’t stir halfway either. It’s honestly this easy! Plus you’ve got your veggies and protein and starchy veggie all in one dish.
