Perfect Egg Salad (Whole30)

I never liked egg salad: until I made some with homemade Whole30 mayo. If you haven't made your own mayo using the Whole30 cookbook recipe yet, get on it! So good. Anyway, this egg salad is full of zippy red onion and also white pepper: but if you don't have any white pepper on hand, just use black. I won't tell anyone!

Here's what you need:

-4 Hard-Boiled Eggs, Chopped

-1/2 Small Red Onion, Finely Chopped

-1/4 c. Whole30 Compliant Mayo

-1 /2 tsp. Yellow Mustard

-Sprinkle (or more) Dill Weed, to your preference

-Dash each of White Pepper, Paprika and Onion Powder

Here's what to do:

Mix it up. Chill one hour for best flavor. And if you wanna turn this into a lunch, chop up some Chomps Sticks and stir it in to give it a beefy, spicy flavor. Yum!
