Blueberry Lemon Cups (Food Freedom)
Here's what you need:
1 Can Coconut Milk, refrigerated to make Coconut Cream
1 Tbsp. Pure Maple Syrup
1/4 tsp. Vanilla Extract
1 Handful Blueberries
1 Tbsp. Slivered Almonds
Here's what to do:
Preheat the oven to 350°.
Crush the frontier bites with a pounder until they're in granola-sized pieces. Not too powdery!
In a bowl, combine maple syrup with frontier bites pieces. The mixture will be sticky!
Spray a muffin tin with coconut oil (very important) and press in mixture until the cups are about 1/2 full (makes about 6 cups).
Bake at 350° for 10 minutes
While the cups are baking, combine coconut cream with vanilla extract and 2 tbsp. lemon juice. Careful not to add too much lemon juice or the cream will become too loose.
Once cups are cooled, spoon lemon coconut cream on each cup and garnish with slivered almonds, lemon and blueberries.
