Lazy Oven Meatballs (Whole30)

Every time I make meatballs, I think of that episode from The Office when Dwight and Stanley prank Jim into making a making a ton of meatballs for them because he thought Stanley liked Food pranks. Anyone know what I'm talking about? Okay anywaysssss, here's what you need for my lazy Whole30 oven meatball recipe:

-1 lb. Lean Ground Beef

-1 Egg

-1/3 C. Almond Flour

-3 Tbsp. Italian Seasoning Blend (I make my own!)

-1 Small Yellow Onion, Diced

-1 Medium Carrot, Finely Diced

Here's what to do:

  1. Mash it all up.

  2. Form into balls.

  3. Put them on a parchment paper lined cookie sheet.

  4. Bake at 375° for 25 minutes.

Do not skip the onions! I hate chopping onions too. You can do this. It'll taste better this way, promise! (If you're a skip-the-onion-in-the-recipe person like I am, you understand. If you're not, you probably think I'm crazy. Sorry.) Serve over spaghetti squash.
