Legume Reintro Pasta Salad (Food Freedom)
This gluten-free, grain-free, dairy-free, soy-free legume-y chickpea pasta salad is perfect for your legume reintro! The dressing is actually just Tessemae’s Italian dressing: it contains honey so it isn’t Whole30 FYI! If legumes are a part of your food freedom, this salad is PERFECT for summer picnics and barbecues.
Here’s what you need:
-1 box Rotini Chickpea Pasta (I use this one)
-1/4 C. Tessemae’s Italian Dressing
-1 Package Salami
-1 Green Pepper
-1 Red Pepper
Here’s what to do:
Cook pasta according to package directions.
Chop peppers, cucumber and salami.
Let pasta cool completely.
Combine pasta with chopped veggies and chopped salami. Toss with Italian dressing. DONE!
I really like to PACK IN the veggies for extra flavor. I use this as a side dish over it being a “main course” to be sure my meals are satiating and full of all the nutrients I need!
