Everything Bagel Roasted Cashews (Whole30)
Nuts are a great option as a source of healthy fat within the Whole30 meal template: but as much as I love raw nuts, roasted is where it’s at. Most store-bought roasted nuts (especially cashews!) aren’t even roasted: they’re FRIED (ew). And usually, they’re fried in peanut or soybean oil, which rules them out for your Whole30 reset. This homemade, Whole30 compliant nut recipe roasts cashews in the oven with the ever-popular Everything Bagel seasoning. You can buy Everything Bagel seasoning at Fresh Thyme, Trader Joe’s, or even on Amazon.
Here’s what you need:
-1 C. Raw Cashews (I buy mine at a discount on Thrive Market)
-1 Tbsp. Avocado Oil
-1 Tbsp. Everything Bagel Seasoning
Here’s what to do:
Preheat oven to 325°. In a bowl, combine cashews and avocado oil and stir until cashews are well-coated. Then, gently stir in Everything Bagel seasoning.
Spread seasoned cashews evenly onto a parchment paper lined cookie sheet, making sure cashews aren’t touching. If you think your cashews need more seasoning, sprinkle some more on.
Bake for 5 minutes, and then gently stir before baking for 10 more minutes. Watch your oven carefully for the final few minutes: they’ll begin to brown quickly once they’re finished roasting!
Remember: nuts on the Whole30 are easy to over-consume. Be sure to make these cashews a part of a balanced Whole30 meal (and not a munch-on-the-couch snack).
