BBQ Bacon Burgers (Whole30)
I posted this quick dinner back in August, and immediately got SO many requests for the recipe! It’s 80% assembly, but I thought I might as well write up the process of how I make each element so you can recreate this dish at home.
Here’s what you need:
1 Medium Sweet Potato
1 Tbsp. Avocado Oil
1 lb. Ground Beef (80%/20% is best)
1 Pkg. Whole30 compliant bacon
Whole30 compliant seasoned salt (like this one)
Whole30 compliant Baby Dill Pickles (garnish)
Here’s what to do:
Preheat oven to 350°. Peel sweet potato, and slice about 1/2 inch thick.
Line a cookie sheet with foil and add strips of bacon. Line a second cookie sheet with foil, brush with the avocado oil, and add the sweet potato slices.
Bake the bacon and sweet potato “buns” for 20 minutes simultaneously.
While the bacon and “buns” are baking, form patties using the ground beef and sprinkle with seasoned salt on both sides. Cook in a skill set to medium heat heat, about 5 minutes per side (depending on burger patty thickness). Transfer to paper towel lined plate.
After 20 minutes in the oven, remove bacon and transfer to paper towel lined plate— then flip sweet potato buns and bake for 10-15 more minutes (or until fork tender).
To assemble, form a burger with 2 slices of sweet potato, one burger patty, and 1-2 strips of bacon. Drizzle with BBQ sauce and top with a baby dill pickle, secured with a toothpick. Serve immediately.
