Lazy Breakfast Casserole (Whole30)

I use this template for breakfast casseroles, swapping out white or sweet potatoes, throwing in peppers or broccoli, trading kielbasa for breakfast sausage or bacon... so easy and interchangeable! For the laziest of meal preps, this is the easiest, fastest version. It heats up SUPER well for a whole week of breakfasts!

Here’s what you need:

- One bag or 8 C. Frozen Hash Browns (shredded or cubed)

- 1/2 Package Kielbasa, chopped

- 11 eggs

1. Preheat oven to 350°. Spray a 9x13 baking dish with oil.

2. Place the kielbasa and the frozen hash browns into the dish and stir together, spreading evenly. Season with salt and pepper if desired.

3. Scramble the eggs and pour over the kielbasa and potato mixture. Cover with foil and bake for 1 hour.
