Egg-less Breakfast Hash (Whole30)
Anyone else a member of the "this recipe will be fine without the onion" club? I'm trying to be better at it: the humble onion adds so much flavor to simple dishes, and if you just keep some chopped onions on hand in the fridge, it's even easier! Anyway, here's my hash recipe.
Here’s what you need:
1 Medium Sweet Potato
1 Small Onion
Sprinkle each Garlic Powder, Paprika, Rosemary
2 Green Onions, diced
1 Bilinski Cajun Sausage, diced
Here’s what to do:
Saute sweet potato and onion in cooking oil of choice on medium-high heat. Add a sprinkle of paprika, garlic powder and rosemary.
Once onions and sweet potatoes are starting to brown, add almost all of the diced green onion, sliced up. Then add one sliced sausage and cook until crisp.
Transfer to a bowl and garnish with your remaining green onions and an avocado because we are Whole30ers and topping things with avocado is what we do.
