Saucy, Crispy Buffalo Chicken Tenders (Whole30)

Honestly, is there anything better than a saucy chicken tender? I eat buffalo everything all the time, so it was only a matter of time I came up with this one. It’s my favorite Whole30 recipe to date!

Here's what you need:

For the chicken strips

-1 lb. Boneless, Skinless Chicken Breast

-1/3 C. Almond Flour

-1 tsp. Paprika

-1/2 tsp. Salt

-1/2 tsp. Black Pepper

-1 Tbsp. Garlic Powder

-2 Eggs

-Avocado Oil

For the Buffalo Sauce

-1/2 C. Frank’s Red Hot

-1/4 C. Ghee

-2 tsp. Garlic Powder

Here's what to do:

1. Slice chicken into thin strips (or nuggets!). Then combine dry ingredients in one bowl and scramble eggs in another bowl.

2. Pour avocado oil into a deep skillet until entire surface is coated in oil. Set to medium-high heat.

3. With one hand, dip the chicken strips one at a time in eggs, coat, and then place in dry ingredients bowl. Use your other hand to press dry mix into chicken strips and set aside (using one hand per bowl keeps your hands from turning into gooey batter fingers).

4. Once oil in skillet is shimmering, Place all chicken strips at once in pan in a single layer. Cook about 4 minutes per side, and transfer to a paper towel lined plate.

5. In a small bowl, Melt ghee and then whisk in Frank's Red Hot and garlic powder. Then use a silicone brush to coat each chicken strip in sauce (you will have leftover sauce: if you want to be frugal just mix 1 part ghee to 2 parts franks and sprinkle in garlic to taste).

6. Serve with Whole30 compliant ranch and a big pile of greens. Enjoy!
