Chipotle Garlic Steak Dinner (Whole30)
Animal protein, starchy veggies and greens all in one simple meal! Just add a dressing or dip and you’ve got a simple meal that makes PERFECT leftovers for days.
Here’s what you need:
-3 lbs. Baby Gold Potatoes
-1 lb. Skirt Steak
-12 oz. Fresh Green Beans
-2 Tbsp. Avocado Oil or Olive Oil
-1 tsp. Salt
-1 tsp. Garlic Powder
-1 tsp. Chipotle Powder
Here’s what to do:
1. Preheat oven to 350°. Wash and quarter potatoes. Slice the skirt steak if necessary.
2. Add the potatoes, green beans and steak to a large oven-safe skillet or foil pan.
3. Sprinkle seasonings over the mixture, then drizzle with the oil. Stir everything together and bake for 45 minutes or until potatoes are fork tender.
4. Remove from oven and serve immediately. I recommend dipping or drizzling with a creamy chipotle ranch or mayo!
