Sweet Potato Broccoli Frittata (Whole30)

Frittatas are SO easy: all you need is a great cast iron pan, eggs, and veggies! I love this sweet potato and broccoli version, but you can swap in any leftover protein and veggies you have on hand to whip this up in a pinch on your Whole30.

Here’s what you need:

- 4 Eggs, whisked

- ½ C. Broccoli Florets, chopped

- 1 Small Sweet Potato

- Avocado Oil

- 8 inch Cast Iron Skillet

Here’s what to do:

  1. Preheat oven to 350°. On the stove, add a tablespoon or so of avocado oil to a cast iron skillet and set it to medium-high heat.

  2. While oven and stove preheats, peel and chop sweet potato into tiny pieces. Add to a bowl with a few tablespoons of water and microwave for 4 minutes or until fork tender.

  3. Once avocado oil is shimmering in pan, add broccoli florets and cook for about 5 minutes or until softened. Then add sweet potato and stir occasionally for 3 minutes.

  4. Pour whisked eggs over veggie mixture and let cook without stirring for 5 minutes. Then, transfer to the oven for 15 minutes. Remove from oven (don’t forget oven mitts, handle will be hot!) and serve immediately.
