Cinna-Almond Fruit Dip (Whole30)

This dip took awhile to figure out the ratio of ingredients, and the prep method. but in the end the ingredients are SO simple and the taste is SO good! This dip is perfect for a Whole30 party platter - not so much to make and eat on the couch after dinner, though! It’s NOT sweetened in any way- just creamy and cool and perfect for spring and summer parties! 

Here’s what you need:

- 3/4 C. Coconut Milk, refrigerated overnight

- 1/4 C. Almond Butter

- 1 tsp. Ground Cinnamon (highest quality is best)

Here’s what to do:

  1. Remove coconut milk from fridge: top should be solid “coconut cream” with separated liquid at the bottom.
  2. Place coconut “cream” and a spoonful of the liquid into a bowl and use a spoon to mash the cream and stir until it starts to slightly melt a bit.
  3. Add almond butter and cinnamon, and then **important** use an immersion blender to combine until the mixture is super smooth and velvety. 

It’s super important to use a blender or immersion blender for this recipe- otherwise the coconut cream doesn’t mix with the almond butter enough!
