Garlic Shoot Sweet Potatoes (Whole30)
Here's what you need:
2 Small Sweet Potatoes, Diced
1 Tbsp. Avocado Oil
2 Cloves Minced Garlic
1 1/2 tsp. Garlic Powder
1 1/2 tsp. Chipotle Powder
2 Tbsp. Penzey's Dried Garlic Shoots
S+P to taste
Here's what to do:
Heat the avocado oil in a skillet. Add minced garlic, garlic powder, and chipotle powder.
Once oil is hot, add the sweet potato and toss until fully coated in oil.
Just as soon as the sweet potatoes are beginning to brown, add the crispy garlic shoots and toss again so all is coated in oil.
Allow the garlic shoots to brown or even become black and very crispy, depending on your preference.
Transfer to a paper towel lined plate and dab out excess oil.
Garnish with fresh cilantro and serve immediately.
