No Chop, No Peel Crockpot Potato Soup (Whole30)
Because sometimes on the Whole30, I really am too lazy to peel and chop potatoes for soup. If you can find a bag of frozen cubed potatoes with the only ingredient as “potatoes”, you’ve got a great base for an easy cozy soup! I like to reallyyyy add the layers with fresh green onion and crumbled compliant bacon.
Here’s what you need:
-2 lb. Bag Cubed Potatoes
-1/4 C. Ghee
-2 C. Vegetable Broth (this one is Whole30 compliant!)
-2 tsp. Salt
-1/4 tsp. Pepper
-1/2 Tbsp. Minced Garlic
-2/3 C. Unsweetened Almond Milk
Here’s what to do:
Add everything EXCEPT the almond milk to the crockpot- ahem, “slow cooker”. If you add the potatoes first, then the seasonings, and then the ghee and broth, you don’t even have to stir it. I’m telling you, I’m THAT lazy! #ihatedoingdishes
Cook 3 hours on high heat.
Remove the lid, add the unsweetened almond milk, stir. Replace lid and turn to low for one more hour.
Done! No need to blend, it should be smooth enough to be soup now. If you prefer it “soupier” aka thinner, add more almondmilk or water.
Again, layering it up is key. I like to serve it with beef dishes like my lazy meatloaf muffins or beef sirloin or something. So cozy and yummy!
