Sweet Potato Rosemary Mash (Whole30)

Here's what you need:

- 3 Small Sweet Potatoes

- 2 Medium Carrots

- 1 Tbsp. Extra Virgin Olive Oil

- 1/3 C. Nutpods, Original Flavor

- 1/4 tsp. Dried Rosemary

- 1/2 tsp. Garlic Powder

- 1/2 tsp. Onion powder

- 1 tsp. Salt

- Fresh Rosemary

Here's what to do:

1. Peel and chop carrots and sweet potatoes. Bake on a parchment paper lined baking sheet for 35 minutes, or until fork tender (no oil required)

2. Once vegetables are baked, add to a medium saucepan. Add all other ingredients and set stovetop to medium heat. Use an immersion blender to combine ingredients completely in saucepan.

3. After blending all ingredients together, cover and set to low for 20 minutes until mash thins (will be very thick at first). 4. That's it! You can crumble bacon on top of each bowl to add some protein, and bonus points if you top it with fresh rosemary makes enough to for 2 as a side or one big bowl. Enjoy!
