Collard Green Turkey Wrap (Whole30)
Sometimes on the Whole30, you just miss sandwiches! For me, it isn’t about the bread, it’s about the CONVENIENCE. So I wrap sandwich fixings in collard greens! They can be a bit tough but boiling them quick helps them to soften. Here’s how I do it:
Here’s what you need:
-1 Leaf Collard Green
- ¼ c. Carrot shreds
-½ Avocado, sliced
-½ C. Broccoli Sprouts
-1 Tbsp. Mayo (I buy this brand, or you can make your own!)
Here’s what to do:
Boil a pot of water and place the collard green leaf in water for 30 seconds.
Pat leaf dry with a paper towel and add all other ingredients to the wrap, burrito-style.
Roll up the leaf carefully, sticking a toothpick in if necessary to hold everything together. Yum!
